Cream Cheese and Berry-Filled Truffles

Ingredients (Makes ~20 truffles)

  • 8 oz (225 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 1 tsp vanilla extract
  • ½ cup (70 g) freeze-dried berries, crushed (strawberries, raspberries, or blueberries)
  • 1 cup (180 g) chocolate chips or melting chocolate for coating

Instructions

  1. Mix filling:
    In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in crushed freeze-dried berries.
  2. Form truffles:
    Scoop small portions (about 1 tbsp) and roll into balls. Place on a parchment-lined tray.
  3. Chill:
    Refrigerate truffles for 30 minutes to firm up.
  4. Coat with chocolate:
    Melt chocolate in a microwave or double boiler. Dip chilled truffles into melted chocolate, letting excess drip off. Place back on parchment paper.
  5. Set:
    Refrigerate until chocolate is firm, about 15–20 minutes.
  6. Serve:
    Enjoy immediately or store in an airtight container in the fridge.
