
🍊🍒 Cranberry Orange Loaf Cake 🍰

🛒 Ingredients
Loaf Cake
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup sugar
- Zest of 1 large orange
- ½ cup fresh orange juice
- ½ cup oil (or melted butter)
- 2 large eggs
- 1 tsp vanilla extract
- 1½ cups fresh or frozen cranberries (halved)
Optional Orange Glaze
- ¾ cup powdered sugar
- 2–3 tbsp orange juice
👩🍳 Instructions
- Preheat oven to 350°F (180°C). Grease or line a loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, rub sugar with orange zest (releases flavor).
- Add orange juice, oil, eggs, and vanilla; mix well.
- Fold dry ingredients into wet until just combined.
- Gently fold in cranberries.
- Pour batter into pan.
- Bake 45–55 minutes, until a toothpick comes out clean.
- Cool completely. Drizzle with orange glaze if using.
💡 Tips
- Toss cranberries in 1 tbsp flour to prevent sinking
- Frozen cranberries go straight in—no thawing
- Keeps moist for days 🍰
