🛒 Ingredients

Loaf Cake

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup sugar
  • Zest of 1 large orange
  • ½ cup fresh orange juice
  • ½ cup oil (or melted butter)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups fresh or frozen cranberries (halved)

Optional Orange Glaze

  • ¾ cup powdered sugar
  • 2–3 tbsp orange juice

👩‍🍳 Instructions

  1. Preheat oven to 350°F (180°C). Grease or line a loaf pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, rub sugar with orange zest (releases flavor).
  4. Add orange juice, oil, eggs, and vanilla; mix well.
  5. Fold dry ingredients into wet until just combined.
  6. Gently fold in cranberries.
  7. Pour batter into pan.
  8. Bake 45–55 minutes, until a toothpick comes out clean.
  9. Cool completely. Drizzle with orange glaze if using.
