Coconut Glazed Loaf Cake

🥣 Instructions

1. Make the Loaf Batter

  1. In a bowl, whisk eggs + sugar until creamy.
  2. Add melted butter and vanilla.
  3. Pour in the coconut milk and mix.
  4. Add flour, baking powder, salt, and mix gently.
  5. Fold in shredded coconut.

2. Bake

  • Pour into a greased loaf pan.
  • Bake at 350°F (175°C) for 45–55 minutes,
    until golden and a toothpick comes out clean.

3. Make the Glaze

Mix:

  • powdered sugar
  • coconut milk
  • vanilla
    until smooth and pourable.

4. Glaze the Cake

When the cake is warm, poke small holes and pour glaze on top.
Sprinkle shredded coconut.
