
🥣 Instructions
1. Make the Loaf Batter
- In a bowl, whisk eggs + sugar until creamy.
- Add melted butter and vanilla.
- Pour in the coconut milk and mix.
- Add flour, baking powder, salt, and mix gently.
- Fold in shredded coconut.
2. Bake
- Pour into a greased loaf pan.
- Bake at 350°F (175°C) for 45–55 minutes,
until golden and a toothpick comes out clean.
3. Make the Glaze
Mix:
- powdered sugar
- coconut milk
- vanilla
until smooth and pourable.
4. Glaze the Cake
When the cake is warm, poke small holes and pour glaze on top.
Sprinkle shredded coconut.
