🛒 Ingredients
Chicken Soup
- 1 whole chicken (or chicken thighs/drumsticks)
- 2 liters (8 cups) water
- 2 carrots, sliced
- 1 parsley root or parsnip (optional)
- 1 small celery root or 1 celery stalk
- 1 onion (whole, peeled)
- 2 cloves garlic
- 1 bay leaf
- Salt & black pepper to taste
- Fresh parsley, chopped
Semolina Dumplings (Žličniki)
- ½ cup semolina (wheat farina)
- 1 large egg
- 1½ tbsp butter, softened
- 2–3 tbsp milk (or soup broth)
- Pinch of salt
- Pinch of nutmeg (optional, traditional)
👩🍳 Instructions
1️⃣ Chicken Soup
- Place chicken in a large pot and cover with cold water.
- Bring slowly to a gentle simmer (skim foam if needed).
- Add carrots, parsley root/parsnip, celery, onion, garlic, bay leaf, salt, and pepper.
- Simmer gently 1½–2 hours (do not boil hard).
- Remove chicken, strain soup if desired, shred meat and return some to the pot.
- Adjust seasoning and keep soup gently simmering.
2️⃣ Semolina Dumplings
- Beat butter with egg until creamy.
- Add semolina, salt, nutmeg, and milk/broth.
- Mix gently and let rest 10 minutes (very important).
- Using two teaspoons, form small dumplings.
- Drop into gently simmering soup.
- Cook 8–10 minutes until dumplings puff up and float.
🍽️ Serve
- Sprinkle with fresh parsley 🌿
- Serve hot with bread on the side

- Dumplings grow while cooking — make them small
