
Chicken Soup with Semolina Dumplings (Grízes Galuska Leves)
Ingredients
Soup
- 1 whole chicken or chicken parts
- 2 carrots, sliced
- 1 parsnip, sliced
- 1 small onion
- 2 cloves garlic
- Salt, to taste
- Black pepper
- Water
Semolina Dumplings
- 1 egg
- 2 tbsp oil or melted butter
- ¼ cup semolina
- Pinch of salt
Instructions
- Soup
Place chicken, vegetables, garlic, salt, and pepper in a pot. Cover with water and simmer gently 1½–2 hours. Strain or remove chicken and vegetables if desired. - Dumplings
Mix egg, oil, semolina, and salt. Rest 10 minutes. - Cook Dumplings
Drop small spoonfuls into gently boiling soup. Cook until they float and are tender, about 5 minutes. - Serve
Return chicken to soup and serve hot.
