Chicken Soup with Semolina Dumplings (Grízes Galuska Leves)

Ingredients

Soup

  • 1 whole chicken or chicken parts
  • 2 carrots, sliced
  • 1 parsnip, sliced
  • 1 small onion
  • 2 cloves garlic
  • Salt, to taste
  • Black pepper
  • Water

Semolina Dumplings

  • 1 egg
  • 2 tbsp oil or melted butter
  • ¼ cup semolina
  • Pinch of salt

Instructions

  1. Soup
    Place chicken, vegetables, garlic, salt, and pepper in a pot. Cover with water and simmer gently 1½–2 hours. Strain or remove chicken and vegetables if desired.
  2. Dumplings
    Mix egg, oil, semolina, and salt. Rest 10 minutes.
  3. Cook Dumplings
    Drop small spoonfuls into gently boiling soup. Cook until they float and are tender, about 5 minutes.
  4. Serve
    Return chicken to soup and serve hot.
