
🫑🧀 Cheesy Stuffed Bell Peppers (Baked)
Ingredients
- 5–6 bell peppers (any color)
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup diced tomatoes (canned or fresh)
- 1 tsp paprika
- ½ tsp cumin or Italian seasoning
- Salt & black pepper, to taste
- 1½ cups shredded cheese (cheddar, mozzarella, or mix)
- Fresh parsley, chopped (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Cut tops off peppers, remove seeds, and arrange peppers upright in the dish.
- Heat olive oil in a skillet. Add onion and garlic; cook until soft.
- Add ground beef and cook until browned. Season with salt, pepper, paprika, and cumin.
- Stir in cooked rice and diced tomatoes. Cook 2–3 minutes.
- Spoon beef mixture into peppers.
- Top each pepper generously with shredded cheese.
- Cover loosely with foil and bake 30 minutes.
- Uncover and bake 10–15 minutes until peppers are tender and cheese is melted and golden.
- Garnish with parsley and serve hot.
