- Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
- Pat zucchini sticks dry with a paper towel (very important for crispiness!).
- In one bowl → whisk the eggs.
- In another bowl → mix breadcrumbs, Parmesan, garlic powder, seasoning, salt & pepper.
- Dip each zucchini stick in egg → coat in breadcrumb mixture → place on baking sheet.
- Lightly spray tops with olive oil.
- Bake 18–22 minutes until golden and crispy.
- Sprinkle mozzarella on top and bake 3–5 more minutes until melted and gooey 🤤
