Braised Oxtails / Oxtail Stew:

Ingredients:

• 3 lbs (1.3 kg) oxtails, cut into sections

• 2 tbsp olive oil

• 1 large onion, chopped

• 3 cloves garlic, minced

• 2 carrots, chopped

• 2 celery stalks, chopped

• 1 bell pepper, chopped

• 1–2 tomatoes, chopped (or 1 can diced tomatoes)

• 4 cups beef broth

• 2 tbsp tomato paste

• 2 bay leaves

• 1 tsp dried thyme

• 1 tsp paprika

• Salt and pepper, to taste

• 2 tbsp flour (optional, for thickening)

• Fresh parsley, chopped (for garnish)
