Ingredients (Makes 1 standard 9-inch cake)
- 1 cup (125 g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 3 large eggs, room temperature
- 1 cup (200 g) granulated sugar
- ½ tsp vanilla extract
- ¼ cup (60 ml) milk, warm
- ¼ cup (60 ml) vegetable oil or melted butter
Instructions
- Preheat oven: 350°F (175°C). Grease and line a 9-inch cake pan.
- Whip eggs and sugar:
In a large bowl, beat eggs on high speed for 8–10 minutes until thick, pale, and fluffy. Gradually add sugar while whipping.
- Add wet ingredients:
Gently fold in vanilla, warm milk, and oil until combined.
- Fold in dry ingredients:
Sift flour, baking powder, and salt together. Gently fold into egg mixture in 2–3 additions, keeping as much air as possible.
- Bake:
Pour batter into prepared pan. Bake 25–30 minutes or until a toothpick inserted comes out clean.
- Cool:
Let cake cool in the pan 10 minutes, then transfer to a wire rack.
