- 3 tbsp olive oil (divided)
- ¼ cup all-purpose flour (for dredging)
- Salt & black pepper, to taste
- 1 large onion, diced
- 3 garlic cloves, minced
- 4 carrots, cut into chunks
- 3 ribs celery, sliced
- 3 large potatoes, cubed
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 cup red wine (optional, more broth if not using)
- 2 tbsp Worcestershire sauce
- 2 bay leaves
- 2 sprigs fresh rosemary (or 1 tsp dried)
- 3 sprigs fresh thyme (or ½ tsp dried)
- 1 cup frozen peas (added at the end)
