Ingredients

Salmon Meatballs

  • 1 lb fresh salmon, skin removed and finely chopped
  • 1 egg
  • ½ cup breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley or dill, chopped
  • 1 tbsp lemon juice
  • Salt & black pepper, to taste
  • 1 tbsp olive oil

Creamy Avocado Sauce

  • 1 ripe avocado
  • ¼ cup Greek yogurt or sour cream
  • 1 clove garlic
  • 1 tbsp lemon or lime juice
  • Salt, to taste
  • 2–3 tbsp water (to thin)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix salmon, egg, breadcrumbs, Parmesan, garlic, herbs, lemon juice, salt, and pepper.
  3. Shape into meatballs and place on baking sheet. Lightly brush or spray with olive oil.
  4. Bake 12–15 minutes until cooked through and lightly golden.

Sauce
5. Blend avocado, yogurt, garlic, lemon juice, salt, and water until smooth.


Serving Ideas

  • Serve over rice or quinoa
  • Tuck into wraps or bowls
