🥣 Instructions:
1. Preheat oven to 350°F (175°C).
Grease or line an 8×8 inch baking dish (or similar).
2. Mix dry ingredients
In a large bowl, stir together oats, baking powder, cinnamon, nutmeg, salt, and chopped nuts.
3. Mix wet ingredients
In another bowl, whisk eggs, then add mashed banana, milk, maple syrup, applesauce, vanilla, and melted coconut oil or butter (if using). Mix until well combined.
4. Assemble
Add the wet mixture to the dry mixture and stir gently. Fold in the diced apple.
5. Pour & top
Pour into the prepared baking dish. Sprinkle with extra nuts and a few thin apple slices or banana coins if you’re feelin’ fancy.
6. Bake
Bake for 35–40 minutes, or until set in the center and golden on top. It’ll smell heavenly!
7. Cool slightly & serve
Let cool for 5–10 minutes before slicing. Serve warm with a splash of milk, a dollop of yogurt, or a drizzle of maple syrup if you want that extra love.
💡 Tips:
- Make it vegan: Use flax eggs (1 tbsp flax + 2.5 tbsp water per egg), non-dairy milk, and plant yogurt.
- Add-ins: Dried cranberries, raisins, or mini chocolate chips are 👌.
- Make ahead: Store leftovers in the fridge for up to 5 days, or freeze slices individually.
- Reheat tip: Pop it in the microwave or oven with a splash of milk for that just-baked vibe.
