🥣 Instructions
- Preheat the Oven
- Set to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- Prepare the Ingredients
- In a large bowl, toss the potatoes and onions with 2 tbsp olive oil, ½ tsp salt, ½ tsp pepper, and ½ tsp paprika.
- Arrange them evenly in the baking dish.
- Season the Chicken
- Pat the chicken thighs dry with paper towels.
- Rub with 1 tbsp olive oil, paprika, thyme, garlic, salt, and pepper.
- Place the thighs skin-side up on top of the potatoes and onions.
- Bake
- Roast uncovered for 45–55 minutes, until the chicken skin is crispy and golden brown and the potatoes are tender.
- (Internal temperature of chicken should reach 165°F / 74°C.)
- Finish & Serve
- Drizzle with a little lemon juice if desired.
- Serve hot — each bite has crispy skin, caramelized onions, and buttery-soft potatoes!
💡 Tips
- For even crispier chicken, broil the dish for the last 2–3 minutes.
- Add carrots or bell peppers for extra color and sweetness.
- You can substitute chicken thighs with drumsticks or bone-in breasts (adjust baking time as needed).
