Bacon-Wrapped Crispy Potatoes 🥓🥔

Ingredients

  • 1 kg (2 lb) small potatoes
  • Salt & black pepper, to taste
  • 1 tsp paprika (smoked if possible)
  • ½ tsp garlic powder
  • 2–3 tbsp olive oil
  • 250 g (½ lb) bacon slices, cut in half
  • Optional: grated Parmesan, dried herbs (thyme or rosemary)

Instructions

  1. Prep the potatoes
    Wash potatoes and cut them into thick wedges.
    Parboil in salted water for 8–10 minutes until just tender. Drain well.
  2. Season
    Place potatoes in a bowl. Add olive oil, salt, pepper, paprika, and garlic powder. Toss to coat.
  3. Wrap
    Wrap each potato piece with a strip of bacon and place seam-side down on a baking tray.
  4. Bake
    Bake at 200°C / 400°F for 30–40 minutes, turning once, until bacon is crispy and potatoes are golden.
  5. Optional finish
    Sprinkle with Parmesan or herbs in the last 5 minutes.

Tips

  • Use thin bacon for extra crispiness.
  • For extra crunch, broil 2–3 minutes at the end.
  • Serve with sour cream, garlic sauce, or spicy ketchup.
