Authentic Lecsó (Hungarian Pepper Stew)

Authentic Hungarian Ratatouille aka Lecsó EXACTLY how Hungarians eat it with juicy tomatoes and Hungarian wax peppers.

Instructions

  1. Heat oil and sauté onions until soft.
  2. Add sliced peppers → cook 5–7 minutes.
  3. Stir in paprika (remove pan briefly from heat so it won’t burn).
  4. Add tomatoes and salt.
  5. Cover and simmer 20–25 minutes until peppers are soft.
  6. Optional: add sausage and cook 10 minutes more.
  7. Optional: stir in beaten eggs and cook 1–2 minutes.

Serving

  • With fresh bread
  • With rice
  • With eggs mixed in
  • With sausage for a fuller meal
