Make the Crust:
- Mix flour + salt.
- Cut in cold butter until crumbly.
- Add cold water slowly until dough forms.
- Divide into 2 balls, wrap, and chill 30 minutes.
Make the Filling:
- Peel and slice apples thinly.
- Toss with sugar, brown sugar, lemon juice, flour, cinnamon, nutmeg & vanilla.
Assemble:
- Roll out one dough ball and fit it into a pie dish.
- Add apple filling and dot with butter pieces.
- Cover with top crust (lattice or full cover).
- Crimp edges and cut a few slits if using full top crust.
- Brush with egg wash (1 egg + splash of milk) and sprinkle sugar over top.
Bake:
✅ Preheat oven: 425°F (220°C)
✅ Bake 45–55 minutes
🔹 Tent foil over edges if browning too fast.
✅ Cool at least 2 hours before slicing so the filling sets.
