Ingredients

  • 2 large eggs
  • ¾ cup sugar
  • ½ cup plain yogurt
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 1 apple, peeled and diced
  • 1 cup blueberries (fresh or frozen, do not thaw)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a cake pan.
  2. Whisk eggs and sugar until pale.
  3. Add yogurt, oil, and vanilla; mix well.
  4. In another bowl, mix flour, baking powder, cinnamon, and salt.
  5. Combine wet and dry ingredients just until smooth.
  6. Fold in apple and blueberries.
  7. Pour batter into pan.
  8. Bake 40–45 minutes until a toothpick comes out clean.
  9. Cool before slicing.
