
🍎🫐 Apple & Blueberry Yogurt Cake
Ingredients
- 2 large eggs
- ¾ cup sugar
- ½ cup plain yogurt
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp cinnamon
- Pinch of salt
- 1 apple, peeled and diced
- 1 cup blueberries (fresh or frozen, do not thaw)
Instructions
- Preheat oven to 350°F (175°C). Grease a cake pan.
- Whisk eggs and sugar until pale.
- Add yogurt, oil, and vanilla; mix well.
- In another bowl, mix flour, baking powder, cinnamon, and salt.
- Combine wet and dry ingredients just until smooth.
- Fold in apple and blueberries.
- Pour batter into pan.
- Bake 40–45 minutes until a toothpick comes out clean.
- Cool before slicing.
