Amish Vegetable Cream Cheese Tortilla Roll-Ups

Ingredients:

  • 8 large flour tortillas (soft, burrito-size)
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup finely chopped bell peppers (any color)
  • ½ cup finely chopped broccoli
  • ¼ cup finely chopped carrots
  • ¼ cup finely chopped green onions
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper, to taste

Instructions:

  1. In a bowl, mix cream cheese and sour cream until smooth.
  2. Stir in cheddar cheese, vegetables, garlic powder, onion powder, salt, and pepper.
  3. Spread an even layer of the mixture over each tortilla.
  4. Roll tortillas tightly and wrap in plastic wrap.
  5. Refrigerate for 1–2 hours to firm up.
  6. Slice into bite-size roll-ups and serve chilled.
