Almás Pite is a traditional Hungarian apple cake with a soft, buttery crust and a spiced apple filling. This rustic dessert is simple yet incredibly flavorful, perfect for a cozy afternoon treat with a cup of coffee or tea.
Ingredients
For the Dough:
- 2½ cups (320 g) all-purpose flour
- ½ cup (100 g) sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (115 g) unsalted butter, cold and cubed
- 1 egg
- ½ cup (120 ml) sour cream
- 1 teaspoon vanilla extract
- Zest of 1 lemon
For the Apple Filling:
- 5-6 medium apples, peeled and grated
- ½ cup (100 g) sugar (adjust based on apple sweetness)
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon semolina or breadcrumbs (to absorb moisture)
For the Topping:
- 1 egg yolk (for brushing)
- Powdered sugar (for dusting, optional)
Instructions
Step 1: Prepare the Dough
- In a large bowl, mix flour, sugar, baking powder, and salt.
- Add cold butter cubes and rub them into the flour with your fingers until the mixture resembles coarse crumbs.
- Add egg, sour cream, vanilla, and lemon zest. Knead into a soft, smooth dough. Divide into two equal portions, wrap in plastic, and refrigerate for 30 minutes.
