
Instructions
1️⃣ Prepare the filling:
- In a small bowl, mix cream cheese, sugar, and vanilla until smooth.
- Fold in ¼–½ cup cherry pie filling (don’t overmix; you want some chunks for texture).
2️⃣ Assemble egg rolls:
- Lay an egg roll wrapper on a clean surface in a diamond shape.
- Spoon about 2 tbsp of cheesecake-cherry filling near the bottom corner.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a dab of water.
3️⃣ Air fry:
- Preheat the air fryer to 370°F (188°C) for 3–5 minutes.
- Lightly brush or spray egg rolls with melted butter or oil.
- Place in the air fryer basket in a single layer (don’t overcrowd).
- Cook for 6–8 minutes, flipping halfway, until golden and crispy.
4️⃣ Serve:
- Let cool for a minute or two.
- Dust with powdered sugar or drizzle with extra cherry sauce if desired.

- Substitute cherry with strawberry, blueberry, or raspberry pie filling.
- For extra crunch, lightly brush with cinnamon-sugar butter after air frying.
- These can be made ahead and frozen uncooked; air fry straight from frozen with an extra 1–2 minutes cooking time.
