Air Fryer Cherry Cheesecake Egg Rolls

Instructions

1️⃣ Prepare the filling:

  • In a small bowl, mix cream cheese, sugar, and vanilla until smooth.
  • Fold in ¼–½ cup cherry pie filling (don’t overmix; you want some chunks for texture).

2️⃣ Assemble egg rolls:

  • Lay an egg roll wrapper on a clean surface in a diamond shape.
  • Spoon about 2 tbsp of cheesecake-cherry filling near the bottom corner.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a dab of water.

3️⃣ Air fry:

  • Preheat the air fryer to 370°F (188°C) for 3–5 minutes.
  • Lightly brush or spray egg rolls with melted butter or oil.
  • Place in the air fryer basket in a single layer (don’t overcrowd).
  • Cook for 6–8 minutes, flipping halfway, until golden and crispy.

4️⃣ Serve:

  • Let cool for a minute or two.
  • Dust with powdered sugar or drizzle with extra cherry sauce if desired.

💡 Tips & Variations:

  • Substitute cherry with strawberry, blueberry, or raspberry pie filling.
  • For extra crunch, lightly brush with cinnamon-sugar butter after air frying.
  • These can be made ahead and frozen uncooked; air fry straight from frozen with an extra 1–2 minutes cooking time.
