Ingredients:

For the sponge layers (6 layers):

  • 9 large eggs (separated)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt

For the chocolate buttercream:

  • 8 oz (225 g) semisweet chocolate (melted, cooled)
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup powdered sugar
  • 3 large egg yolks (room temperature)
  • 1 tsp vanilla extract

For the caramel topping:

  • 1 cup granulated sugar
  • ¼ cup water
  • 1 tsp lemon juice
