- 2 lbs (900 g) potatoes, starchy
- 1 egg
- 1 ½ – 2 cups (180–240 g) all-purpose flour (as needed)
- 1 tsp salt
- 12–14 ripe plums (small, Italian prune plums are best)
- 12–14 sugar cubes (or ½ tsp sugar per plum)
