
🍄 Rotisserie Chicken & Mushroom Soup
Ingredients (4–6 servings):
- 2 tbsp olive oil or butter
- 1 medium onion (diced)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 3 cloves garlic (minced)
- 8 oz (225 g) mushrooms (sliced – cremini, button, or mix)
- 6 cups chicken broth (low sodium)
- 2 cups shredded rotisserie chicken
- 1 tsp dried thyme (or 2 tsp fresh)
- 1 bay leaf
- ½ cup heavy cream (optional, for richness)
- Salt & black pepper (to taste)
- Fresh parsley (for garnish)
Optional Add-ins:
- ½ cup rice, barley, or egg noodles for a heartier version
- A splash of sherry or white wine when sautéing mushrooms for extra depth
