🍄 Rotisserie Chicken & Mushroom Soup

Ingredients (4–6 servings):

  • 2 tbsp olive oil or butter
  • 1 medium onion (diced)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 3 cloves garlic (minced)
  • 8 oz (225 g) mushrooms (sliced – cremini, button, or mix)
  • 6 cups chicken broth (low sodium)
  • 2 cups shredded rotisserie chicken
  • 1 tsp dried thyme (or 2 tsp fresh)
  • 1 bay leaf
  • ½ cup heavy cream (optional, for richness)
  • Salt & black pepper (to taste)
  • Fresh parsley (for garnish)

Optional Add-ins:

  • ½ cup rice, barley, or egg noodles for a heartier version
  • A splash of sherry or white wine when sautéing mushrooms for extra depth
