🇭🇺 Traditional Hungarian Kürtőskalács (Chimney Cake) Recipe 🥖🔥

Kürtőskalács, or chimney cake, is a crispy, caramelized pastry with a soft, fluffy inside, traditionally baked over an open fire. It’s coated in sugar, cinnamon, cocoa, or nuts and is a favorite at Hungarian fairs and bakeries like Édes Mackó!


🛒 Ingredients (Makes 4-5 chimney cakes)

For the Dough:

500 g (4 cups) all-purpose flour 🌾
7 g (2 ¼ tsp) instant yeast 🍞
200 ml (¾ cup) warm milk 🥛
50 g (¼ cup) sugar 🍯
1 egg 🥚
50 g (¼ cup) melted butter 🧈
1 pinch of salt 🧂

For the Coating:

100 g (½ cup) sugar 🍬
1 tsp cinnamon (optional) 🌿
Chopped nuts, cocoa, or coconut (optional) 🥥🍫


👩‍🍳 Instructions

1️⃣ Make the Dough

  1. In a bowl, mix warm milk, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  2. Add flour, egg, salt, and melted butter, kneading until smooth.
  3. Cover and let rise for 1 hour, or until doubled in size.

2️⃣ Shape the Chimney Cakes

  1. Preheat oven to 200°C (400°F).
  2. Grease metal baking tubes (or use foil-covered rolling pins).
  3. Roll dough into long strips (about 1-inch wide).
  4. Wrap the dough spirally around the tube, slightly overlapping each layer.

3️⃣ Coat & Bake

  1. Brush with melted butter, then roll in sugar and cinnamon.
  2. Place on a wire rack or stand them upright.
  3. Bake for 12-15 minutes, turning occasionally for even caramelization.
