Creamy, tangy, and packed with delicious flavors, this Macaroni Salad is a must-have for BBQs, potlucks, or anytime you need a refreshing side dish! Every bite is loaded with tender pasta, crunchy veggies, and a rich, flavorful dressing. Trust me, this is the BEST! 😋
🛒 Ingredients (Serves 6-8)
For the Salad:
✔ 2 cups elbow macaroni (cooked & cooled) 🍝
✔ ½ cup mayonnaise 🥄
✔ ¼ cup sour cream (for extra creaminess)
✔ 1 tablespoon mustard (yellow or Dijon)
✔ 1 teaspoon apple cider vinegar 🍏
✔ ½ teaspoon sugar (balances the flavors)
✔ ½ teaspoon salt 🧂
✔ ¼ teaspoon black pepper 🌿
Mix-Ins (For That Perfect Crunch & Flavor!):
✔ ½ cup celery, diced 🌿
✔ ½ cup red bell pepper, diced ❤️
✔ ⅓ cup red onion, finely chopped 🧅
✔ ⅓ cup dill pickles, chopped 🥒 (or relish)
✔ ¼ cup shredded carrots 🥕
✔ 2 hard-boiled eggs, chopped 🥚 (optional, but delicious!)
👩🍳 Instructions
1️⃣ Cook the Pasta
- Boil macaroni until al dente, then drain and rinse under cold water to stop cooking.
2️⃣ Make the Dressing
- In a bowl, whisk together mayo, sour cream, mustard, vinegar, sugar, salt, and pepper until smooth.
3️⃣ Assemble the Salad
- In a large bowl, combine cooled macaroni with all the chopped veggies & eggs.
- Pour the dressing over and mix well until everything is coated.
4️⃣ Chill & Serve
- Cover and refrigerate for at least 1 hour (best if chilled for 4 hours!).
- Stir before serving and garnish with fresh parsley or paprika.
