
Burgonyás Lángos – Hungarian Potato Flatbread
Burgonyás Lángos is a delicious Hungarian deep-fried flatbread made with mashed potatoes, giving it a softer and fluffier texture than traditional lángos. It’s a beloved street food in Hungary, often served hot and topped with garlic sauce, sour cream, grated cheese, or even ham. This version with potatoes is extra special because it stays soft longer and has a slightly richer taste.
Ingredients (Makes about 6-8 lángos)
- 2 medium potatoes (about 250g), peeled and diced
- 3 cups (375g) all-purpose flour
- 1 packet (7g) instant yeast (or 25g fresh yeast)
- 1 tsp salt
- ½ tsp sugar
- ¾ cup (180ml) warm milk
- ¼ cup (60ml) warm water
- 2 tbsp vegetable oil (plus more for frying)
Optional Toppings:
- Sour cream
- Grated cheese (cheddar, feta, or smoked cheese)
- Garlic sauce (minced garlic mixed with oil and water)
- Ham or sausage
- Dill or chives for garnish
Instructions
Step 1: Prepare the Mashed Potatoes
- Boil the diced potatoes in salted water until soft (about 15 minutes).
- Drain and mash them well, ensuring there are no lumps. Let them cool slightly.
Step 2: Prepare the Dough
- In a small bowl, mix the warm milk, warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy. (If using fresh yeast, crumble it into the warm liquid and stir until dissolved.)
- In a large mixing bowl, combine the flour and salt.
- Add the mashed potatoes, yeast mixture, and vegetable oil. Mix everything together.
- Knead the dough for about 8-10 minutes until smooth and elastic. It will be slightly sticky but soft.
- Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it doubles in size.
Step 3: Shape and Fry
- Lightly oil your hands and divide the dough into equal portions (about 6-8 pieces).
- Gently stretch each piece into a round shape, about ¼-inch (0.5 cm) thick. Don’t roll it out—stretching by hand keeps it fluffy!
- Heat about 1 inch (2-3 cm) of vegetable oil in a large pan over medium-high heat (around 350°F / 175°C).
- Carefully place a dough round into the hot oil and fry for 1-2 minutes per side, until golden brown and puffed up.
- Remove and drain on paper towels.
Step 4: Add Toppings & Serve
- Spread with garlic sauce for extra flavor.
- Top with sour cream and grated cheese for the classic version.
- Add ham, sausage, or even a fried egg for a hearty meal.
- Sprinkle with dill or chives for extra freshness.
