Traditional Hungarian Cottage Cheese (Curd) Strudel – Túrós Rétes

This classic Hungarian Túrós Rétes is a delicate, flaky strudel filled with a sweet and creamy cottage cheese mixture. It’s a beloved dessert in Hungary, often enjoyed with powdered sugar on top.


Ingredients:

(Makes about 2 strudels)

For the Dough (Traditional Homemade Strudel Dough):

  • 2 ½ cups (300g) all-purpose flour
  • 1 pinch of salt
  • 1 tbsp vegetable oil
  • ¾ cup (180ml) lukewarm water
  • 1 tsp vinegar (optional, for elasticity)

(Or use store-bought phyllo dough for a shortcut!)

For the Cottage Cheese Filling:

  • 1 ½ cups (350g) cottage cheese or dry curd cheese (túró)
  • ½ cup (100g) sour cream
  • 1 egg yolk
  • ¼ cup (50g) sugar
  • 1 tsp vanilla extract
  • Zest of ½ lemon (optional)
  • 1 tbsp semolina or breadcrumbs (to absorb excess moisture)
  • ¼ cup raisins (optional, soaked in rum for extra flavor)

For Brushing:

  • ¼ cup melted butter
  • ¼ cup sour cream

Instructions:

1. Prepare the Dough (if making from scratch):

  1. In a bowl, mix flour and salt. Add oil, lukewarm water, and vinegar. Knead until a smooth, elastic dough forms.
  2. Cover with a warm bowl and let it rest for 30-40 minutes.

(If using store-bought phyllo dough, skip to the filling!)


2. Prepare the Filling:

  1. In a mixing bowl, mash the cottage cheese with a fork.
  2. Add sour cream, egg yolk, sugar, vanilla, lemon zest, and semolina (or breadcrumbs).
  3. Mix well and fold in the raisins (if using).
