Hungarian Gulyás (Goulash) Recipe

Ingredients:

• 2 tbsp lard or vegetable oil

• 1 large onion, finely chopped

• 2 lbs (900g) beef chuck, cut into 1-inch cubes

• 2 cloves garlic, minced

• 1-2 tbsp Hungarian sweet paprika

• 1 tsp caraway seeds, crushed (optional)

• Salt and pepper to taste

• 2 medium carrots, sliced

• 1 large parsnip, sliced (optional)

• 2-3 medium potatoes, cubed

• 1 bell pepper, diced

• 1 large tomato, chopped (or 1/2 cup canned tomatoes)

• 6 cups beef broth or water

• Fresh parsley, chopped (for garnish)
