🇭🇺 Hungarian Potato Paprika – Paprikás Krumpli

Ingredients

  • 2 lbs (900 g) potatoes, peeled and cut into chunks
  • 1 medium onion, chopped
  • 2 tablespoons oil or lard
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon caraway seeds (optional)
  • 1 Hungarian sausage (kolbász), sliced (optional)
  • 1 tomato, chopped (optional)
  • 1 green pepper, chopped (optional)
  • 2–3 cups water or broth

Directions

  1. Heat oil in a large pot. Sauté chopped onion until soft and lightly golden.
  2. Remove from heat and stir in paprika (to prevent burning).
  3. Add potatoes, salt, pepper, caraway seeds, sausage (if using), tomato, and green pepper. Stir well.
  4. Pour in enough water or broth to just cover the potatoes.
  5. Bring to a boil, then reduce heat and simmer 25–30 minutes until potatoes are tender and sauce thickens slightly.
  6. Adjust seasoning and serve hot.
