🇭🇺 Hungarian Mushroom Soup (Gombaleves)

A rich, creamy, and comforting soup flavored with sweet Hungarian paprika and finished with sour cream.


Ingredients

  • 1 lb fresh mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon Hungarian sweet paprika
  • 1 teaspoon dried dill (optional)
  • 4 cups vegetable or chicken broth
  • 1 cup whole milk
  • ½ cup sour cream
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Fresh parsley (for garnish)

Directions

  1. In a large pot, melt butter over medium heat. Add onion and cook until soft.
  2. Add sliced mushrooms and cook 5–7 minutes until tender.
  3. Remove pot from heat and stir in paprika (so it doesn’t burn). Add flour and mix well.
  4. Return to heat and slowly stir in broth. Add dill, salt, and pepper. Simmer 10–15 minutes.
  5. Stir in milk and simmer gently for 5 minutes.
  6. In a small bowl, mix sour cream with a ladle of hot soup to temper. Stir back into the pot.
  7. Add lemon juice, adjust seasoning, and simmer 2–3 more minutes (do not boil).
  8. Garnish with fresh parsley and serve warm.
