🇭🇺 Paprikás krumpli

🛒 Ingredients

  • 2 lbs (1 kg) potatoes, peeled & cubed
  • 1 large onion, finely chopped
  • 2 tbsp oil or lard
  • 1½–2 tbsp Hungarian sweet paprika
  • 1 tsp hot paprika (optional)
  • 1 Hungarian sausage (kolbász), sliced (optional but traditional)
  • 1 tomato, chopped (or 2 tbsp canned tomatoes)
  • 1 green bell pepper, chopped
  • 1 bay leaf (optional)
  • Salt & black pepper to taste
  • 2–3 cups water (enough to barely cover potatoes)

👩‍🍳 Instructions

  1. Sauté Onion
    Heat oil in a pot. Add onion and cook until soft and golden.
  2. Add Paprika
    Remove pot briefly from heat and stir in paprika (prevents burning).
  3. Add Sausage
    Stir in sliced sausage and cook 2–3 minutes.
  4. Add Vegetables
    Add potatoes, tomato, bell pepper, bay leaf, salt, and pepper.
  5. Simmer
    Pour in enough water to just cover the potatoes.
    Bring to a boil, then simmer 20–25 minutes until potatoes are tender and sauce thickens.
  6. Adjust Seasoning
    Taste and adjust salt and paprika if needed.
