🛒 Ingredients
- 2 lbs (1 kg) potatoes, peeled & cubed
- 1 large onion, finely chopped
- 2 tbsp oil or lard
- 1½–2 tbsp Hungarian sweet paprika
- 1 tsp hot paprika (optional)
- 1 Hungarian sausage (kolbász), sliced (optional but traditional)
- 1 tomato, chopped (or 2 tbsp canned tomatoes)
- 1 green bell pepper, chopped
- 1 bay leaf (optional)
- Salt & black pepper to taste
- 2–3 cups water (enough to barely cover potatoes)
👩🍳 Instructions
- Sauté Onion
Heat oil in a pot. Add onion and cook until soft and golden.
- Add Paprika
Remove pot briefly from heat and stir in paprika (prevents burning).
- Add Sausage
Stir in sliced sausage and cook 2–3 minutes.
- Add Vegetables
Add potatoes, tomato, bell pepper, bay leaf, salt, and pepper.
- Simmer
Pour in enough water to just cover the potatoes.
Bring to a boil, then simmer 20–25 minutes until potatoes are tender and sauce thickens.
- Adjust Seasoning
Taste and adjust salt and paprika if needed.
