🇭🇺 Hungarian Green Bean Soup (Zöldbableves)
🛒 Ingredients
- 1 lb (450g) fresh green beans, trimmed & cut
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp oil or butter
- 1½ tbsp Hungarian sweet paprika
- 1 tbsp flour
- 4 cups vegetable or chicken broth
- 1 bay leaf
- ½ tsp caraway seeds (optional)
- ½ cup sour cream
- 1 tsp vinegar or lemon juice
- Salt & black pepper to taste
- Fresh parsley (optional)
👩🍳 Instructions
- Sauté Base
Heat oil in a pot. Add onion and cook until soft. Stir in garlic.
- Add Paprika
Remove from heat briefly and stir in paprika (prevents burning).
- Cook Beans
Add green beans, broth, bay leaf, and caraway.
Bring to a boil, then simmer 20–25 minutes until beans are tender.
- Thicken
Mix flour with a little water to form a smooth paste. Stir into soup and simmer 5 minutes until slightly thickened.
- Finish
Stir in sour cream and vinegar. Season with salt and pepper
