🇭🇺 Hungarian Meatballs (Húsgombóc)

🛒 Ingredients

For the Meatballs

  • 1 lb (500g) ground pork (or pork & beef mix)
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1 egg
  • ½ cup breadcrumbs
  • 1 tbsp Hungarian sweet paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried parsley

For the Paprika Sauce

  • 1 tbsp oil or lard
  • 1 small onion, finely chopped
  • 1 tbsp Hungarian sweet paprika
  • 1 tbsp flour
  • 1½ cups beef or chicken broth
  • ½ cup sour cream
  • Salt to taste

👩‍🍳 Instructions

  1. Prepare Meatballs
    • In a bowl, mix ground meat, grated onion, garlic, egg, breadcrumbs, paprika, salt, pepper, and parsley.
    • Shape into medium-sized balls.
  2. Brown the Meatballs
    • Heat oil in a skillet.
    • Brown meatballs on all sides (they don’t need to cook through yet). Remove and set aside.
  3. Make the Sauce
    • In the same pan, sauté chopped onion until soft.
    • Remove from heat briefly and stir in paprika.
    • Add flour and cook 1 minute.
    • Slowly whisk in broth until smooth.
  4. Simmer
    • Return meatballs to the pan.
    • Cover and simmer 20–25 minutes until cooked through and sauce thickens.
  5. Finish
    • Stir in sour cream and adjust seasoning.
