🇭🇺 Pörkölt (Hungarian Stew)

🛒 Ingredients

  • 2 lbs (900g) pork or beef, cut into cubes
  • 2 large onions, finely chopped
  • 2 tbsp lard or oil
  • 2 tbsp Hungarian sweet paprika
  • 1 tsp hot paprika (optional)
  • 1 green bell pepper, chopped
  • 1 tomato, chopped (or 2 tbsp canned tomatoes)
  • 2 cloves garlic, minced
  • 1 tsp caraway seeds (optional)
  • 1 bay leaf (optional)
  • Salt & black pepper to taste
  • ½–1 cup water or broth

👩‍🍳 Instructions

  1. Sauté Onions
    Heat lard or oil in a heavy pot. Add onions and cook slowly until golden and soft.
  2. Add Paprika
    Remove pot from heat briefly, stir in paprika (prevents burning).
  3. Brown the Meat
    Add meat cubes and stir well to coat. Cook 5–8 minutes.
  4. Season & Simmer
    Add garlic, bell pepper, tomato, caraway, bay leaf, salt, and pepper.
    Pour in a little water or broth (just enough to create sauce).
  5. Cook Slowly
    Cover and simmer on low heat for 60–90 minutes, stirring occasionally, until meat is tender and sauce thickens.
