
Hungarian Goulash Soup (Homemade)
Ingredients
- 1 lb (450 g) beef stew meat, cubed
- 2 tbsp oil or lard
- 1 large onion, chopped
- 2–3 cloves garlic, minced
- 2 tbsp sweet Hungarian paprika
- 1 tsp caraway seeds (optional)
- 1 tsp salt
- ½ tsp black pepper
- 4 cups (1 L) beef broth or water
- 2 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 bell pepper, chopped
- 2 tomatoes, chopped (or 1 cup canned)
- Optional: 1 tsp marjoram
Instructions
- Heat oil in a large pot. Sauté onions until soft.
- Remove from heat briefly, stir in paprika to release flavor.
- Add beef, garlic, caraway seeds, salt, and pepper. Brown lightly.
- Pour in beef broth, cover, and simmer 1 hour until beef is tender.
- Add potatoes, carrots, bell pepper, and tomatoes. Simmer another 20–25 minutes until vegetables are tender.
- Adjust seasoning and add marjoram if using.
Serve hot with crusty bread or a dollop of sour cream.
