
Hungarian Walnut and Poppy Seed Rolls (Diós és Mákos Kalács) – Recipe Only
Ingredients – Dough:
- 500 g all-purpose flour
- 50 g sugar
- 1 packet (7 g) dry yeast
- 1/2 tsp salt
- 250 ml milk, lukewarm
- 50 g butter, melted
- 1 egg
Ingredients – Walnut Filling:
- 150 g ground walnuts
- 3–4 tbsp sugar
- 2–3 tbsp milk
- 1 tsp cinnamon (optional)
Ingredients – Poppy Seed Filling:
- 150 g poppy seeds, ground
- 3–4 tbsp sugar
- 2–3 tbsp milk
Topping:
- 1 egg, beaten (for brushing)
- Powdered sugar (optional)
Instructions:
- Dissolve yeast in lukewarm milk with a teaspoon of sugar; let it foam.
- Mix flour, sugar, and salt. Add melted butter, egg, and yeast mixture; knead into a soft dough.
- Cover and let rise 1–1.5 hours until doubled.
- Divide dough into portions; roll each into a rectangle.
- Spread either walnut or poppy seed filling evenly over the dough.
- Roll up tightly and pinch seams.
- Place rolls on a lined baking tray; brush with beaten egg.
- Bake at 180°C (350°F) for 25–30 minutes until golden.
- Cool slightly, dust with powdered sugar if desired, and serve.
