Hungarian Walnut and Poppy Seed Rolls (Diós és Mákos Kalács) – Recipe Only

Ingredients – Dough:

  • 500 g all-purpose flour
  • 50 g sugar
  • 1 packet (7 g) dry yeast
  • 1/2 tsp salt
  • 250 ml milk, lukewarm
  • 50 g butter, melted
  • 1 egg

Ingredients – Walnut Filling:

  • 150 g ground walnuts
  • 3–4 tbsp sugar
  • 2–3 tbsp milk
  • 1 tsp cinnamon (optional)

Ingredients – Poppy Seed Filling:

  • 150 g poppy seeds, ground
  • 3–4 tbsp sugar
  • 2–3 tbsp milk

Topping:

  • 1 egg, beaten (for brushing)
  • Powdered sugar (optional)

Instructions:

  1. Dissolve yeast in lukewarm milk with a teaspoon of sugar; let it foam.
  2. Mix flour, sugar, and salt. Add melted butter, egg, and yeast mixture; knead into a soft dough.
  3. Cover and let rise 1–1.5 hours until doubled.
  4. Divide dough into portions; roll each into a rectangle.
  5. Spread either walnut or poppy seed filling evenly over the dough.
  6. Roll up tightly and pinch seams.
  7. Place rolls on a lined baking tray; brush with beaten egg.
  8. Bake at 180°C (350°F) for 25–30 minutes until golden.
  9. Cool slightly, dust with powdered sugar if desired, and serve.
