🥦 Baked Cauliflower (Rakott Karfiol)

Ingredients

  • 1 large cauliflower, cut into florets
  • 1 cup rice
  • 300–400 g Hungarian sausage or smoked sausage, sliced
  • 1 medium onion, finely chopped
  • 2 cups sour cream
  • 2 eggs
  • Salt, black pepper
  • 1 tsp paprika
  • Butter or oil for greasing
  • Optional: grated cheese for topping

Instructions

  1. Cook the rice in salted water until tender. Set aside.
  2. Boil cauliflower florets in salted water until just tender. Drain well.
  3. In a pan, sauté onion until soft. Add sausage slices and cook until lightly browned.
  4. In a bowl, mix sour cream with eggs, salt, pepper, and paprika.
  5. Grease a baking dish. Layer half the rice, half the cauliflower, and half the sausage mixture.
  6. Spoon over some of the sour cream mixture.
  7. Repeat layers and finish with remaining sour cream (and cheese if using).
  8. Bake at 180°C (350°F) for 35–40 minutes, until golden and bubbly.
  9. Let rest 10 minutes before serving.

Hearty, cozy, and very Hungarian 🇭🇺 Perfect with a simple cucumber salad on the side.
