Hungarian Gerbeaud Cake (Zserbó Szelet) – Recipe

Ingredients:

  • 500 g all-purpose flour
  • 250 g unsalted butter, cold
  • 100 g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • 300 g apricot jam
  • 200 g ground walnuts
  • 150 g dark chocolate
  • 50 g butter

Instructions:

  1. Mix flour, baking powder, and salt. Cut in cold butter until crumbly. Add sugar, eggs, and vanilla; knead into smooth dough. Divide into 3 parts; chill 20–30 min.
  2. Preheat oven to 180°C (350°F). Roll out first third of dough; place in pan. Spread half apricot jam.
  3. Roll out second third; place over jam. Spread ground walnuts.
  4. Roll out final third; place on top. Bake 35–40 min until golden. Cool completely.
  5. Melt chocolate with butter; pour over cooled cake. Let set before slicing.
