PALACSINTA (Hungarian Pancakes)

Ingredients

  • 250 g all-purpose flour
  • 2 eggs
  • 500 ml milk
  • 1 tbsp sugar
  • Pinch of salt
  • 1 tbsp oil (plus more for frying)

Instructions

  1. Whisk flour, eggs, milk, sugar, salt, and oil until smooth and thin.
  2. Rest batter 15 minutes.
  3. Heat a lightly oiled pan.
  4. Pour a thin layer of batter, swirl to coat.
  5. Cook until edges lift, flip, cook briefly.
  6. Stack and keep warm.

  • Apricot jam
  • Sweetened cottage cheese
  • Cocoa & sugar
  • Ground walnuts with sugar and lemon zest
