
Ingredients
For the soup:
- 1 onion, chopped
- 2 carrots, sliced
- 1 parsnip or potato, sliced
- 2 tablespoons oil
- Salt and black pepper to taste
- 1.5 liters water or chicken stock
For the meatballs:
- 400 g ground meat (chicken or beef)
- 1 egg
- 2 tablespoons breadcrumbs or soaked bread
- 1 small onion, grated
- Salt and black pepper
- Chopped parsley (optional)
Instructions
- Heat oil in a pot and sauté the chopped onion until soft.
- Add carrots and parsnip (or potato), then pour in water or stock.
- Season with salt and pepper and let simmer.
- In a bowl, mix ground meat, egg, breadcrumbs, onion, seasoning, and parsley.
- Form small meatballs.
- Gently add meatballs to the simmering soup.
- Cook on low heat for 20–25 minutes until meatballs are fully cooked.
- Taste and adjust seasoning before serving.
