Hungarian Layered Potatoes (Rakott Krumpli)

Ingredients

  • 1 kg potatoes, peeled and sliced
  • 4 eggs, hard-boiled and sliced
  • 200 g smoked sausage or bacon, diced
  • 1 onion, finely chopped
  • 300 ml sour cream
  • Salt and black pepper to taste
  • Butter or oil for greasing

Instructions

  1. Boil the potatoes until just tender, then slice them.
  2. Fry the bacon or sausage until lightly crispy; add onion and cook until soft.
  3. Preheat oven to 180°C / 350°F.
  4. Grease a baking dish.
  5. Layer potatoes at the bottom, season lightly.
  6. Add sliced eggs, then bacon and onion.
  7. Spread some sour cream on top.
  8. Repeat layers, finishing with potatoes and sour cream.
  9. Bake for 30–40 minutes until golden on top.
  10. Let rest for a few minutes before serving.
