Hungarian Chicken Vegetable Soup (Csirkeleves with Dumplings)

Ingredients

For the soup:

  • 500 g chicken pieces (breast or thighs, cut into chunks)
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup green peas
  • 2 tablespoons oil
  • 1 tablespoon paprika
  • Salt and black pepper to taste
  • 1.5 liters water or chicken stock

For the dumplings (nokedli):

  • 1 egg
  • 4 tablespoons flour
  • Pinch of salt
  • Water (as needed)

Instructions

  1. Heat oil in a pot and sauté the onion until soft.
  2. Add paprika, stir quickly, then add chicken pieces.
  3. Season with salt and pepper and cook for a few minutes.
  4. Add carrots, potatoes, peas, and water or stock.
  5. Simmer on medium heat for 25–30 minutes until vegetables are tender.
  6. Mix egg, flour, salt, and a little water to make a thick batter.
  7. Drop small dumplings into the soup and cook for 5–7 minutes until done.
  8. Adjust seasoning and serve hot.
