- 250 g (2 cups) all-purpose flour
- 150 g (2/3 cup) sugar
- 150 g (2/3 cup) butter, cold and cubed
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
For the Filling:
- 2 cups fruit preserves or jam (apricot, raspberry, or mixed berries)
- Optional: fresh fruit pieces
For Topping:
- 50 g (1/4 cup) butter, cold and cubed
- 50 g (1/4 cup) sugar
- 50 g (1/2 cup) flour
Instructions:
- Prepare the Dough:
- In a bowl, mix flour, sugar, baking powder, and salt.
- Cut in cold butter until mixture resembles breadcrumbs.
- Add egg and vanilla, mix to form a smooth dough.
- Assemble Base:
- Press 2/3 of the dough into a greased or lined baking pan to form the base.
- Spread jam evenly over the base.
- Prepare Topping:
- Mix flour, sugar, and butter until crumbly.
- Sprinkle over the jam layer.
- Bake:
- Preheat oven to 180°C (350°F).
- Bake 30–35 minutes until golden brown.
- Cool & Serve:
- Let cool completely.
