Hungarian Mushroom Soup

Ingredients:

  • 1 lb mushrooms, sliced
  • 2 tbsp butter or oil
  • 1 medium onion, finely chopped
  • 2 tbsp Hungarian sweet paprika
  • 1 tsp dried dill (or fresh, optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp soy sauce (optional)
  • 3 cups chicken or vegetable broth
  • 1 cup milk
  • 2 tbsp flour
  • 1/2 cup sour cream
  • 1 tsp lemon juice

Instructions:

  1. Melt butter in a pot, sauté onion until soft.
  2. Add mushrooms and cook until tender.
  3. Remove from heat, stir in paprika and dill.
  4. Add broth and soy sauce, simmer 15 minutes.
  5. Whisk flour with milk, pour into soup, stir until thickened.
  6. Lower heat, add sour cream and lemon juice.
  7. Season to taste and serve hot.
