
Ingredients
- 2 cups all-purpose flour
- 1 tbsp cornstarch (extra crisp)
- 1½ tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cayenne (optional)
Wet Dip
- 2 eggs
- 1 cup buttermilk
Instructions
- Mix all dry ingredients in a large bowl.
- Whisk eggs and buttermilk in another bowl.
- Dip chicken in wet mixture, then dredge in flour.
- Dip back into wet mixture, then flour again for extra crunch.
- Let coated chicken rest 10 minutes before frying.
- Fry in 350°F (175°C) oil until golden and cooked through (about 12–15 minutes).

- Add a splash of hot sauce to the buttermilk for flavor
- Resting the batter makes the crust stick better
