Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp cornstarch (extra crisp)
  • 1½ tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne (optional)

Wet Dip

  • 2 eggs
  • 1 cup buttermilk

Instructions

  1. Mix all dry ingredients in a large bowl.
  2. Whisk eggs and buttermilk in another bowl.
  3. Dip chicken in wet mixture, then dredge in flour.
  4. Dip back into wet mixture, then flour again for extra crunch.
  5. Let coated chicken rest 10 minutes before frying.
  6. Fry in 350°F (175°C) oil until golden and cooked through (about 12–15 minutes).
