Ingredients (Makes ~12 dumplings)
Dough
- 2 cups (250 g) all-purpose flour
- 2 large eggs
- 1 cup (250 g) mashed potatoes, cooled

Filling
- 12 plums (preferably ripe but firm)
- 12 tsp sugar (or 1 per plum)

Instructions
- Prepare the dough
- Mix mashed potatoes, flour, eggs, sugar, and salt into a smooth, pliable dough.
- If too sticky, add a little more flour; if too dry, add a bit of water.
- Prepare the plums
- Pit the plums. Place 1 tsp sugar (and a pinch of cinnamon if desired) into the cavity.
- Form the dumplings
- Divide dough into 12 portions. Flatten each portion, wrap around a plum, and seal tightly.
- Roll gently to form a smooth ball.
- Cook the dumplings
- Bring a large pot of salted water to boil.
- Carefully drop dumplings in, reduce heat to simmer, and cook 8–10 minutes until they float.
- Prepare the topping
- In a skillet, melt butter, toast breadcrumbs until golden, then stir in sugar.
- Serve
- Roll the cooked dumplings in the breadcrumb mixture.
- Serve warm with extra sugar or a dollop of sour cream (optional).
