
Hungarian Bean and Sausage Soup (Bableves Kolbásszal) 🇭🇺🥣

Ingredients
- 2 cups dried white beans, soaked overnight
- 250–300 g Hungarian smoked sausage (kolbász), sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bay leaf
- 1 tsp sweet Hungarian paprika
- Salt & black pepper, to taste
- 6 cups water or broth
- 2 tbsp oil or lard
Instructions
- Cook Beans
Drain soaked beans. Place in a large pot with water/broth. Bring to a boil, then reduce heat and simmer until beans are nearly tender (about 45–60 minutes). - Sauté Aromatics
In a small pan, heat oil/lard, sauté onion and garlic until soft. Stir in paprika briefly, then add to the soup. - Add Vegetables & Sausage
Add carrot, bay leaf, and sausage slices. Simmer 15–20 minutes until vegetables are tender and flavors meld. - Season & Serve
Remove bay leaf. Adjust seasoning with salt and pepper. Serve hot with rustic bread.
