For the Crust:
- 2 sheets puff pastry, thawed
- 1 egg, beaten (for egg wash)

1️⃣ Prepare the filling
Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until soft and translucent. Stir in the garlic and carrot, cooking for another 2–3 minutes.
2️⃣ Cook the beef
Add the ground beef and cook until browned, breaking it up with a spoon. Season with salt, pepper, thyme, and mixed herbs.
3️⃣ Build the flavor
Stir in tomato paste and Worcestershire sauce. Pour in the beef broth and let simmer for 5–7 minutes.
For a thicker filling, add the cornstarch mixture and cook until the sauce thickens. Remove from heat and let cool slightly.

Preheat oven to 400°F (200°C).
Line a pie dish with one sheet of puff pastry. Spoon in the cooled meat filling evenly, then cover with the second pastry sheet. Seal edges and trim excess.
