2️⃣ Make the custard base

  1. Heat 800 ml milk with vanilla until hot (not boiling).
  2. In a bowl, whisk:

    • cornstarch
    • remaining 200 ml milk
  3. Slowly pour hot milk into the yolk mixture, whisking constantly.
  4. Return everything to the pot and cook on medium heat, stirring until very thick.
  5. Remove from heat.

3️⃣ Prepare the fluffy egg-white layer (authentic Hungarian style)

  1. Beat egg whites with salt until soft peaks.
  2. Gradually add sugar and beat until stiff and glossy.
  3. Gently fold the hot custard into the egg whites while still warm.

4️⃣ Assemble

  1. Place the uncut puff pastry sheet in a baking dish.
  2. Pour custard filling evenly over it.
  3. Top with the pre-cut pastry squares.
  4. Press very gently.

  • Dust generously with powdered sugar before serving.
