
🇭🇺🥬🥔 Hungarian Savoy Cabbage & Potato Stew
(Kelkáposzta-főzelék / Kelkáposzta-főzelék krumplival)

🛒 Ingredients
- 1 medium Savoy cabbage, chopped
- 2 medium potatoes, peeled & diced
- 1 medium onion, finely chopped
- 2 tbsp oil or lard
- 2 cloves garlic, minced
- 1½ tsp Hungarian sweet paprika
- ¼ tsp caraway seeds (optional but traditional)
- Salt & black pepper, to taste
- 3 cups water or vegetable broth
For Thickening (Rántás – optional but classic)
- 1 tbsp oil or lard
- 1 tbsp flour
- ½ tsp Hungarian sweet paprika
To Serve (Traditional Options)
- Fried sausage or smoked kielbasa
- Fried eggs
- Meatballs or pork cutlets
👩🍳 Instructions
- Prepare the Base
- Heat oil/lard in a pot.
- Sauté onion until soft and translucent.
- Add garlic and cook briefly.
- Paprika Step
- Remove pot from heat.
- Stir in paprika and caraway seeds (prevents burning).
- Cook the Vegetables
- Add cabbage and potatoes.
- Season with salt and pepper.
- Add water/broth, cover, and simmer 25–30 minutes, until tender.
- Traditional Thickening (Optional)
- Heat oil, stir in flour until lightly golden.
- Remove from heat, add paprika.
- Stir into stew and simmer 5 minutes.
- Adjust & Serve
- Taste and adjust seasoning.
- Stew should be creamy, not soupy.
